bacon & fig dip

mmmm… bacon… 

here’s another recipe in ode to bacon. this gluten-free, creamy dip is surprisingly easy to prepare and makes for a great appetizer for your next dinner party, gameday or — you guessed it — baconpalooza!

the bacon:
– heat up 1-2 tbsp extra-virgin olive oil in large saucepan on medium heat
– add 5-6 strips of country-style bacon to pan
– fry bacon in pan for a few min until slightly crispy on both sides
– remove from heat & set aside bacon on plate to cool
– pat bacon w/ papertowels to remove excess fat & oil
– reserve bacon fat in pan to add to dip mixture

the dip:
in a small mixing bowl, mix & fold together the following ingredients together until well-combined:
– 1/4 cup low-fat, plain greek yogurt
– 100g chevre frais
– crispy-fried bacon (rough chop into bacon bits)
– 5-6 small dried figs (rough chop into small pieces)
– season w/ ground black peppercorns
– drizzle bacon fat leftover from pan

food styling:
– serve immediately, best served warm
– pairs well w/ gluten-free chips or your fave crackers
– store leftovers in an airtight container in the fridge

almond blackberry banana smoothie

fancy a cup of frothy, fruity, nutty goodness? well, this is just the ticket.

fruit smoothies make for a fantastic breakfast on-the-go — and better yet, you can prepare it the night before. it’s become part of my evening routine when i’m packing lunch for the next day. just make sure you don’t leave the smoothie in the blender overnight… pour the smoothie into a cup with a tight lid and pop it in the fridge. voila! breakfast will be waiting for you at sunrise. :)

blend well:
– 1/2 cup frozen organic blackberries
– 1 ripe banana, sliced into chunks
– 2 heaping tbsp organic plain greek yogurt
– 2/3 cup almond milk
– 1/3 cup water

(tip: i thought i’d try almond milk this time around. but you can easily substitute it with regular skim milk, if you prefer.)

berry berry french toast

it was all smiles at the breakfast table. berries, vanilla yogurt & fresh sourdough – wouldn’t that make you happy, too? :)

french toast was the name of the game for weekend brunch. the taste & texture of sourdough bread is perfect for french toast — soaking up the egg and complementing the flavourful toppings. i love the locally-made, artisan sourdough from sidewalk citizen bakery. there’s something really comforting about aviv’s artisan bread. pair that with some lovely greek yogurt and fresh berries and you’ve got some pretty stellar ingredients for a delish french toast!

prep the toast:
– whisk 2 small eggs w/ ground cinnamon in prep bowl
– soak 2 thick slices of artisan sourdough bread (on both sides, until egg mixture is absorbed into bread)

the filling:
– 2 tbsp strawberry greek yogurt (sandwiched in between toasted sourdough slices)
– 1/2 cup fresh strawberries (hulled & sliced, sandwiched in between, reserve some strawberries for garnish)

– melt 2 tsp of unsalted butter in large saucepan
– add sourdough slices to pan for 1-2 min on each side, or until egg-soaked bread is toasted golden brown.

(tip: if you have any leftover egg mixture in the prep bowl, feel free to pour it over the bread in pan at start of cooking.)

– double ingredient quantities above for 2 servings
