primavera veal cavatappi

veal just might be the new black. don’t you just love it when you try out a new ingredient that sings on your plate? ok, well maybe not literally, but you know what i mean. :)

so i found some fresh veal scallopini on a recent trip to the market, and felt inspired to embark on another culinary experiment. veal is one of those ingredients that i never seem to stumble upon at the grocery store or farmers’ market, so i only seem to eat veal when dining out… until now. holla!

the veal:
– heat up 1 tbsp extra-virgin olive oil (evoo) in large wok on high heat
– add 500g veal scallopini (sliced into bite-sized pieces)
– drizzle w/ balsamic vinegar
– add dash of sea salt
– season w/ ground chinese five-spice
– stir ingredients often for a few min until half-cooked, then add veggies to wok (see below)

stir it up:
combine the following ingredients to veal in wok, stirring often on high heat:
– 1 tsp extra-virgin olive oil
– 1 cup frozen peas
– 1 cup frozen corn kernels
– 1/2 cup sundried tomatoes
– 1 cup fresh organic arugula
– season w/ ground chinese five-spice
– stir-fry for a few min until meat is cooked & frozen veggies are thawed

southwest chicken w/ chipotle corn & baked kale chips

texmex food is a lot of fun. sweet corn. guacamole. chipotle bbq. great aromas & southwest flavours. this down-home comfort food makes for a fantastic weekend brunch or sunday dinner. yummers, indeed.

southwest marinade:
combine the following ingredients in a small prep bowl
– 2 tbsp organic extra-virgin olive oil (evoo)
– 1 tbsp organic apple cider vinegar
– 3 heaping tbsp southwest spice blend (combo of spices incl salt, ground cumin, ground mexican oregano, ground coriander, ancho chile pepper, black pepper, garlic)

saute the chicken:
– brown 2 shallots (rough chop) w/ evoo in saucepan
– 2 lean boneless chicken breasts, coated on both sides w/ southwest marinade
– add marinated chicken to saucepan, flipping to ensure that each side of the chicken gets some shallot/olive oil mixture
– cook on medium heat, until chicken is browned and no longer pink inside

slowcooked apple rum pork chops w/ cream of portobello mushroom & cavatappi

mmmm… slowcooked, tender pork chops. cream of portobello mushroom.
it really is that simple. i heart my slowcooker. :)


i didn’t have a lot of time to get dindins together that day, so i thought i’d get a headstart in the early afternoon with the slowcooker, let the ingredients simmer while i did stuff around the house, and hope for a culinary masterpiece. ok, so it wasn’t quite a masterpiece, but it certainly pleased my palate. stew-like slowcooker goodness. :)


yogurt marinade:

combine the following ingredients in a medium-sized prep bowl:
– 1.5 cups plain low-fat yogurt
– 1/4 cup fresh parsley (finely chopped)
– 1 tbsp organic extra-virgin olive oil (evoo)
– 1 tbsp organic apple cider vinegar
– 1 tsp ground nutmeg
– 1 tsp ground black peppercorns
