recipe roundup: back in the salad again

In appetizers, culinary experiments, easy weeknight meals, lunch, recipe roundup, side dishes, vegetarian on 01.06.12 at 7:20 am

carrots and greens aren’t just rabbit food. i had to chuckle when my neighbour recently referred to salads and vegetarian fare as ‘rabbit food’. i’m a firm believer that salads can definitely pack a nutritious punch without sacrificing on flavour. and if you get creative, you can find plenty of ways to sneak in a little extra protein in among the greens!

  1. I’ve really come to enjoy all types of salads. I try to eat healthy and see these as an easy way to get a lot of fruits and vegetables in your diet. My favorite combination so far might be a salmon and spinach salad with some type of nut on it. It might just be vegetables and protein but it will fill you up for hours!
