smoked prosciutto & fruit linguine

i spy… a nectarine in your pasta! rainy day = random pantry dinner. (read: too lazy to go get groceries tonight.) yes, folks — those are nectarine slices in that linguine. with smoked prosciutto. and sicilian olives. true story.

it may sound like an odd combo of flavours, but it was surprisingly yummy. the saltiness of the proscuitto balanced nicely with the sweetness of the nectarines & olives. not bad for a random mishmash of ingredients from the fridge & pantry! :)

prep ingredients:
– 1 cup smoked prosciutto (torn into pieces)
– 1 fresh nectarine (pitted, chopped into bite-sized chunks)
– 4-5 sicilian olives (pitted, sliced in halves)
– 1/8 cup gruyere (grated)
– leftover linguine (boiled, al dente)

food styling:
– plate a small serving of linguine (cooked, al dente)
– pile on the smoked prosciutto, nectarine & sicilian olives
– garnish w/ gruyere (grated, melted)
– season w/ ground black peppercorns

this is truly an easy-peasy weeknight meal. you can save even more time by using leftover pasta from the night before. buon appetito!

    • i must admit, i was a bit skeptical about the combo when i was cooking up this culinary experiment. was surprised & delighted with the tasty sweet/salty contrast in flavours! :)
