chipotle tofu & ruby chard salad

back in the salad again… one of my fave things about summertime is all the wonderful food at outdoor summer festivals. though as much as i love food-on-a-stick and all things yummy about food trucks & outdoor food tents, there comes a time when all you crave is a good, healthy salad. :)

some leftover organic tofu and fresh ruby chard from the market were just what i needed to kickstart my salad adventures… so good.

prep tofu & veggies:
– 1.5 cups organic raw tofu (sliced into bite-sized chunks)
– 1 large organic heirloom tomato (rough chop)
– 1 large shallot (peeled, rough chop)
– 1 cup frozen peas

sauté tofu & veggies:
– brown shallot & 1 tbsp extra-virgin olive oil (evoo) to wok on high heat
– add tofu chunks to wok
– season tofu chunks w/ 1 tsp chipotle blend (combo of spices incl chipotle powder, ground paprika, cumin, coriander, granulated onion, garlic powder)
– sauté tofu for 1-2min until chipotle seasoning is well-combined
– add tomatoes & frozen peas to tofu in wok
– sprinkle 1/2 tsp chipotle blend & a dash of sea salt
– sauté tofu & veggies for 4-5min until tofu is cooked
– remove from heat & set aside, covered

sauté ruby chard
– in the same wok that you used for the tofu & veggies, add a little bit of evoo
– add 1 medium shallot (peeled, rough chop) & brown for 1-2min
– wash & drain 1 bunch of organic ruby chard in colander w/ cold water
– remove stems from chard
– add chard to pan, season w/ ground black peppercorns
– sauté for 2-3min until leaves are wilted and a darker shade of green
food styling:
– dish up sauteed ruby chard in a shallow bowl. add veggie mixture, and pile on the tofu!
– season w/ ground black peppercorns & enjoy!

  1. I agree–love the fresh food at summer festivals or farmers markets. I’m not a huge tofu fanatic, but this sounds pretty dang delicious! Love the chipotle blend.
