rosemary camembert chicken & roasted balsamic carrots

so perhaps this was just another (fabulous) excuse to melt cheese… and who doesn’t love melted cheese?!

in the spirit of culinary experiments, i picked up some fantastic, farm-fresh ingredients on a recent trip to the new organic market in town — casel marché. the new flavours of the week: fresh organic rosemary sprigs & free-range, organic chicken thighs. yes, believe it or not, this is my first time cooking with chicken thighs (shocking, i know). i suppose that’s what happens when you get in the habit of buying boneless chicken breasts at the grocery store. i’ve heard before that you can get some really incredible flavour from roasting bone-in chicken thighs… and now i totally get it. this was one juicy chicken.

and the fragrant, woody flavour of the fresh rosemary really worked well with the chicken & melted camembert… after all, who doesn’t love melted cheese?!

– preheat oven to 450F

prep seasoning:
– 2-3 long sprigs of fresh organic rosemary (leaves removed from stem)
– 2 large shallots (peeled, rough chop)

prep marinade:
whisk together the following ingredients in small prep bowl:
– 2-3 tbsp extra-virgin olive oil (evoo)
– 2 tsp herbes de provence

prep chicken:
– make a ‘flap’ pocket by horizontally slicing 2 free-range, organic chicken thighs (bone-in, skin-on)
– open ‘flap’ & lightly brush marinade on inside (reserve some marinade to brush on exterior)
– stuff each chicken thigh w/ pétit camembert (approx 30g in total for both pieces)
– sprinkle fresh rosemary leaves over camembert
– close ‘flap’ and place stuffed chicken in roasting pan (lined with cooking parchment paper)
– lightly brush remaining marinade on exterior of stuffed chicken
– add chopped shallots to roasting pan, surrounding the stuffed chicken
– sprinkle fresh rosemary leaves
– season w/ ground black peppercorns

– roast chicken at 450F for approx 30min

(tip: the roasted chicken is cooked when it’s crispy golden brown on the outside and no longer pink inside.)

– remove pan from oven & set aside to cool for 1-2min

food styling:
– plate a small serving of organic tagliatelle pasta (cooked, al dente)
– place 1 piece of roasted camembert chicken on pasta
– garnish w/ caramelized shallots
– season w/ ground black peppercorns
– serve w/ roasted balsamic carrots on the side (chopped on diagonal)
