homemade raspberry frozen yogurt

tart. that would be the best way to describe this frozen fruity concoction.

i’m not really a fan of raspberries, but felt compelled to pick up a carton of raspberries during a recent fresh fruit extravaganza at the grocery store. perhaps i went a little overboard stocking up on fresh summer fruit. i guess that’s what the onset of summer does to a foodie. :)

good intentions aside, i ended up having to freeze most of the raspberries before they got beyond the point of freshness. so, what do you do with frozen (and oh-so-tart) raspberries, you ask? apart from the usual fruit smoothie for brekkie, i thought it might make for a great culinary experiment with frozen yogurt (sans ice cream maker). indeed. after all, it worked fabulously with the frozen mango before.

blend well w/ handheld mini-blender:
– 1/4 cup plain, low-fat yogurt
– 3/4 cup frozen raspberries

(tip: blend until the raspberries are combined well with the yogurt. the texture should be frothy & smooth. no need to add crushed ice, since the frozen raspberries will already add enough moisture.)

freeze it:
– place blended fruit & yogurt in a sealed freezer-safe container, and put it in the freezer for 45min to 1 hour to set.

food styling:
– scoop raspberry frozen yogurt in a small bowl or teacup
– garnish w/ fresh mint or frozen seedless green grapes (optional)

clearly, i was too impatient to bother with food styling that day! just couldn’t wait to dig in to this frozen yogurt. yummers. :)

    • shocking, i know. i love fresh berries, but for some reason, raspberries aren’t one of my faves. though i think i could make an exception for this frozen yogurt. :) thanks for stopping by my blog!

  5. Love that you didn’t have to use an ice cream maker. Especially since I don’t have one on hand. I want some of this yogurt right now! :)


    • i don’t have an ice cream maker in my kitchen either… it’s been on my wishlist for a while, but now i’m thinking that i don’t really need one. :)


  6. Frozen yogurt…literally! I bet that has to taste so much better than store bought and the ingredients are clean and healthy!


    • my thoughts exactly. it’s also great for portion control… this frozen yogurt is best served immediately after it sets, so it means that i don’t have a big tub of ice cream sitting in my freezer calling my name! ;)
