savory pea pancakes & southwest veggies

peas & pancakes? say wha?! yes, savory pancakes are just as yummy as the sweet breakfast kind… especially if you have an odd craving for pancakes at dinnertime! don’t you just love breakfast for dinner? :)

here’s my take on leftover redux with sauteed butternut squash from a previous yumyumyummers recipe for an easy weeknight meal with a southwest kick.

oatmeal pancake batter:
whisk together the following ingredients in mixing bowl:
– 1/2 cup rolled oats
– 1/2 cup whole-wheat flour
– 1/2 tsp baking powder
– 1/2 cup water
– 2 eggs
– 1/2 tsp margarine
– dash of salt

peas, no pod:
– add 1 cup frozen peas (partially thawed) to batter. combine well.

pancakes on the griddle:
– heat up 1 tbsp extra-virgin olive oil (evoo) in saucepan on medium heat
– pour a small portion of batter into pan and cook for 3-4 min on each side (or until golden brown)

– makes 3-4 small pancakes. set aside & cover to keep warm.

southwest veggies:
– heat up 1 tbsp extra-virgin olive oil (evoo) in saucepan on medium heat
– add 1 cup butternut squash (peeled, cubed) to pan
(tip: to save time, you can get pre-cut butternut squash in the produce section at the grocery store. or, you can repurpose leftover butternut squash from a previous yumyumyummers recipe.)

– add 1 red bell pepper (pitted, seeded, sliced)
– season w/ 1.5 tbsp southwest spice blend (combo of spices incl salt, ground cumin, ground mexican oregano, ground coriander, ancho chile pepper, black pepper, garlic)
– sauté veggies for 2-3min until cooked

food styling:
– serve pancakes topped with sauteed southwest veggies
