zucchini kale soup

kale is the new black? ok, perhaps the new green. :)

so i’m a bit of a cooking nerd. this weekend i got a new granite ceramic non-stick pan to replace my ratty old frying pan that desperately needed to go. of course, i couldn’t wait to test-drive my slick new cookware, so i decided to embark on another culinary experiment… at 1000pm on a sunday night! (yes, i’m a nerd.)

prep veggies:
– 1 bunch of kale (rinse well, remove stems & tear into bite-size pieces)
(tip: ensure that kale is thoroughly dry. either use a salad spinner, colander or pat gently w/ tea towels to remove any excess moisture.)
– 2 medium zucchini (sliced into rounds)
– heat up 1 tsp extra-virgin olive oil (evoo) in pan on high heat
– brown 2 shallots (peeled, rough chop) in pan
– sauté zucchini w/ shallots & ground black pepper until slightly browned. remove & set aside.
– in same pan, sauté kale for a few min until leaves wilt. set aside.

blend & puree the following ingredients in blender:
– sauteed zucchini & kale
– 1 cup gluten-free cottage cheese
– 1/4 cup skim milk
– 1 cup water

(tip: you may need to do this in several batches, depending on your blender’s capacity.)

– add blended ingredients to large pot at medium heat
– add 1/2 cup fresh chinese parsley (finely chopped)
– add 1 cup water
– season w/ ground black peppercorns to taste
– simmer on medium heat for 10-15min & stir occasionally
(tip: i recommend adding 1/3 cup of grated cheese — perhaps parmesan or 3-yr aged cheddar — to add some additional flavour. although i didn’t add cheese this time around, i think the sharp flavour of parmesan or aged cheddar would complement the kale & zucchini nicely.)

food styling:
– serve warm in small bowl or teacup
– garnish w/ roasted squash seeds

ps – i heart my new cookware. fantabulous! :)
