seafood alfredo & brown rice pasta shells

prawns two posts in a row? say, wha?! yes, folks, i’m a big fan of seafood. it’s funny because my parents tell me that it was like pulling teeth to get me to eat seafood when i was a kid! interesting how your tastes can evolve through the years… though i suppose it makes things easier when you can ‘dress it up’ with fave foods like cheese! i mean, c’mon, who doesn’t love cheese? :)

(and the answer is no… i didn’t use that entire block of parmesan in this recipe!)

prep:
– grate 1.5 cups parmesan cheese. set aside.
– boil 2 cups gluten-free brown rice pasta shells (al dente)

prawns:
– add 2 cups (1/2 medium bag) large prawns into saucepan on medium heat (ideally raw, deveined, peeled)
– drizzle & toss w/ evoo. season prawns w/ 2 tbsp ground black peppercorns and a dash of salt
– add 1/4 cup fresh italian parsley (rough chop) to saucepan
– cook for a few minutes until prawns are no longer translucent. should be a nice vibrant white & pink in colour.

alfredo sauce:
– add 1 cup skim milk to prawns in saucepan
– add 3/4 cup grated parmesan
– add 1 cup plain low-fat yogurt & 2 tsp honey
– season w/ ground black peppercorns
– simmer & stir for 3-4min

pasta:
– add 2 cups cooked gluten-free brown rice pasta shells to prawns & alfredo sauce
– add remaining 3/4 cup grated parmesan. fold & melt into prawns & pasta. simmer for 3-4min.
– season w/ ground black peppercorns
