chunky hot chocolate cookies

time to get out your cookie jar! this yummy cookie recipe is simple and a lovely way to get your chocolate fix. chunky hot chocolate cookies are perfect for afternoon tea, a lunchbox snack, or served warm with vanilla frozen yogurt for dessert! yummers.

my cookie culinary experiment was inspired by and adapted from a fellow chocoholic blogger’s recipe, with a few modifications based on ingredients in my pantry. it’s always interesting to swap out ingredients when cooking, though it’s often not as forgiving to substitute ingredients or quantities when baking… i’m happy to say that this culinary experiment worked out! :)

– preheat oven to 375F

mix dry ingredients:
sift the following in small prep bowl & set aside:
– 1 1/4 cups all-purpose flour
– 1 1/4 cups whole-wheat flour
– 1 tsp baking soda
– 1/2 tsp baking powder

mix moist ingredients:
in large mixing bowl, cream together until smooth:
– 1 cup unsalted butter (partially melted)
– 3/4 cup organic cane sugar
– 2 tbsp honey
– then beat in 1 large egg & 1 tsp pure vanilla
– gradually blend in dry ingredients with 1/2 cup water to keep cookie batter moist
– then mix in 1/4 cup hot chocolate mix
(tip: i used thomas haas’ extra dark hot chocolate mix.)

– prep 2 baking sheets: line w/ cooking parchment paper
– place heaping tablespoonfuls of cookie dough, 2 inches apart on baking sheet
– bake for 12-14min at 375F, until golden brown
– allow to cool for a few minutes before indulging in these lovely bites of chocolate goodness! :)
