creamy mushroom pork & peas

so i was inspired by a stroganoff… but quickly realized that i didn’t have any beef or sour cream in my fridge. i took it as a perfect opportunity for a culinary experiment. :)

and don’t you love it when culinary experiments turn into a fantastic easy weeknight meal? i had recently bought a package of frozen peas on a whim, thinking that it would be a good ingredient to have on-hand in my freezer for some yet-to-be-determined recipe. good ingredient, indeed.

here’s what i did…

cream the mushroom:
– brown 1 large shallot (rough chop) w/ extra-virgin olive oil (evoo) in saucepan on medium heat
– add 3 cups crimini mushrooms (sliced)
– add 2 cups frozen peas (not thawed)
– simmer mushrooms & peas with 1/4 cup light vegetable creamcheese & 1 cup skim milk, until creamcheese melts into sauce.

sauté the pork:
– add 2 cups stir-fry pork strips to ingredients in saucepan
– season w/ 2 tsp herbes de provence (blend of lavender, savory, fennel, thyme, rosemary & canola oil)
– sauté pork w/ mushrooms & peas for 6-8min, or until pork is cooked

food styling:
– side dish: 2 cups gluten-free brown rice pasta shells (boiled, al dente)
– season w/ ground black peppercorns

  1. so i tried a variation of this recipe for dindins tonight… swapping out the stir-fry pork w/ prawns, and the veggie creamcheese w/ dill havarti instead. easypeasy & yummers. :)
