chipotle corn on the cob

sweet corn on the cob reminds me of summer bbqs & picnics in the park… funny how i felt compelled to cook this summertime dish in the middle of a winter wonderland — not really the season for patio lanterns & picnic blankets!

this dish is simple and perfect for those busy weeknights when you’re tight on time, but still looking for some flavour in your meal.

cook the corn:

– bring a large pot of water to boil
– add 4 cobs of sweet corn & boil corn for 10-12min
– drain water & set cobs aside to cool

season the corn: – lightly brush the corn kernels w/ extra-virgin olive oil
– lightly drizzle 1.5 tsp chipotle blend (combo of spices incl chipotle powder, ground paprika, cumin, coriander, granulated onion, garlic powder)
