baked sweet potato fries w/ lemon cilantro aioli

you know those days when you’re craving french fries? well, this was one of those days… good thing that there’s a healthy option for most everything. and i just happened to have a sweet potato sitting in my pantry. i took that as a sign that it was meant to be. :)

lemon cilantro aioli:
combine the following ingredients in a small prep bowl:
– 1 cup low-fat, plain balkan yogurt
– 1 tbsp extra-virgin olive oil (evoo)
– 1 tbsp honey
– 1/4 cup fresh cilantro (finely chopped)
– 1 tsp ground black peppercorns
– squeeze juice from 1/2 lemon
– season w/ lemon zest
(tip: be careful when using a rasp to grate the lemon — the blades on a rasp are very sharp. only grate the ‘zest’ or outermost rind of lemon, and not the ‘pith’ or white fibres underneath the rind.)
– cover bowl & refrigerate while baking fries

the sweet potato fries were inspired by (and adapted from) an easypeasy recipe from my fave cooking show on the telly – cbc’s best recipes ever. i’ve tried the sweet potato wedges that the original recipe yields, and thought i’d modify it this time around and bake sweet potato fries. it worked fabulously!

sweet potato fries:
– preheat oven to 400F
– 1 large sweet potato (scrub and clean well)
– cut sweet potato in half, then cut lengthwise into long thin strips
– in small prep bowl, combine 2 tbsp sunflower/canola oil, 1/2 tsp salt & 1/2 tsp ground black peppercorns
– place fries evenly on 2 baking sheets lined w/ cooking parchment paper
– lightly brush fries w/ sunflower oil marinade using a pastry brush
– season w/ ground black peppercorns
– bake for approx 25-30min at 400F, until tender
