maple-soy glazed salmon w/ roasted cucumber & organic spinach

maple syrup isn’t just for pancakes, my friends… buddy the elf would be proud! :) surprisingly, maple syrup makes for a fantastic fish marinade when combined with soy sauce & honey. (yes, folks — maple syrup & fish!)

this asian-fusion salmon dish was inspired by a recipe from epicurious.com, and i’ve tweaked it a bit based on ingredients in my pantry. the original recipe calls for a 30min window for marinating the salmon. i didn’t have much time to get lunch ready today, so i opted to marinate the salmon for 5-7min and it seemed to work just fine.

marinating the salmon:
in medium prep bowl, combine the following ingredients:
– 3 tbsp organic pure maple syrup
– 1 tsp honey
– 1.5 tbsp low-sodium soy sauce
– place 1 atlantic salmon filet in marinade for 5-7 min (turn to coat)

cooking the salmon:
– heat 1 tbsp extra-virgin olive oil (evoo) in saucepan over medium heat
– brown 1 large shallot (rough chop) w/ evoo
– add marinated salmon to saucepan & drain remaining marinade over fish (to reduce sauce)
– cook until salmon slightly charred on outside & opaque in center (but do not overcook)
– turn sides to cook evenly, about 3min per side

the roasted veggies take more time to cook than the salmon, so it might be a good idea to roast the cucumber the evening prior, or allow ample prep time in advance of the salmon that day.

roasting the cucumber:
– 1/2 cucumber (sliced rounds)
– lightly brush cucumber rounds w/ evoo using a pastry brush (both sides)
– season w/ ground black peppercorns
– place evenly in small roasting pan or baking sheet
– roast cucumber for approx 20min at 400F

food styling:
– place salmon on a bed of fresh organic spinach
– add slices of roasted cucumber to salad
– no need to add any dressing, as maple-soy marinade from salmon is quite flavourful already.
