slowcooked apple rum pork chops w/ cream of portobello mushroom & cavatappi

mmmm… slowcooked, tender pork chops. cream of portobello mushroom.
it really is that simple. i heart my slowcooker. :)

i didn’t have a lot of time to get dindins together that day, so i thought i’d get a headstart in the early afternoon with the slowcooker, let the ingredients simmer while i did stuff around the house, and hope for a culinary masterpiece. ok, so it wasn’t quite a masterpiece, but it certainly pleased my palate. stew-like slowcooker goodness. :)

yogurt marinade:

combine the following ingredients in a medium-sized prep bowl:
– 1.5 cups plain low-fat yogurt
– 1/4 cup fresh parsley (finely chopped)
– 1 tbsp organic extra-virgin olive oil (evoo)
– 1 tbsp organic apple cider vinegar
– 1 tsp ground nutmeg
– 1 tsp ground black peppercorns

prep the pork:
– add 1/4 red onion (rough chop into thin long strips) w/ evoo in large saucepan for 1-2min to brown onions
– coat 5-7 boneless pork chops in marinade bowl to entirely cover meat w/ yogurt marinade
– place marinated pork chops in saucepan w/ onions for 2-3min, just to brown both sides.

– place marinated pork chops & onions in medium-sized slowcooker
– pour leftover marinade over pork chops
– add 1/2 cup organic baby carrots
– add 2 portobello mushrooms (gently washed, de-gilled & sliced into long strips)
– add 1 cup water, mixed w/ 2 small packets of chicken bouillon
– add 3 shots (approx 4.5 fl oz) jamaican apple rum (optional)
– sprinkle 1/3 cup all-purpose flour evenly over ingredients (to thicken the cream sauce)
– fold ingredients to ensure well-combined in slowcooker
– slowcooker for approx 4 hours at high-setting, until pork is tender

note: recommend not leaving the slowcooker unattended. you will need to stir ingredients occasionally and lift the slowcooker lid slightly to release steam occasionally during the slowcooking process, so it’s best to stay nearby. be sure to follow the safety instructional manual that came with your particular model of slowcooker.


– boil 3 cups cavatappi pasta in large pot, until al dente

food styling:
– dish up the stew-like pork chop & veggies on top of some cavatappi in a soup bowl
– drizzle cream of portobello mushroom & sprinkle w/ ground black peppercorns
