sunflower seed & blueberry granola bars

nothing like a little granola on-the-go to keep you going… this homemade granola made for a perfect healthy snack to bring to the ski hill this weekend. packed w/ awesome nutty crunchy goodness, dried blueberries & my fave new ingredient — honey!

my culinary experiment w/ homemade granola was inspired by (and adapted from) an easypeasy recipe from my fave cooking show on the telly – cbc’s best recipes ever. based on ingredients on-hand in my pantry, here’s my take on this awesome snack-e-roo… great for a pre-workout energy boost, lunchbox snack, or afternoon sugar fix.

– preheat oven to 350F
– prep a 13- x 9-inch (3.5L) baking dish: line w/ parchment paper. set aside.

the gooeyness:
in a small saucepan on medium heat, bring the following ingredients to a boil:
– 1/2 cup sunflower/canola oil
– 1/2 cup honey
– 1/2 cup organic pure maple syrup
– reduce & simmer until slightly thickened. this should only take a few minutes. set aside to cool.

the nutty crunch:
in a large mixing bowl, combine the following ingredients, while honey-syrup mixture is simmering:
– 2 cups whole grain rolled oats
– 1 cup hulled, unsalted organic sunflower seeds
– 1/2 cup organic flax seed
– 1 cup dried blueberries
– 1/2 cup blanched sliced almonds

– after honey-syrup mixture cools for a minute or two, pour 3/4 of mixture over the dry ingredients in bowl. reserve 1/4 mixture.

– pour granola/gooey mixture into baking pan (lined w/ parchment paper)
– pack granola/gooey mixture evenly into pan. use spatula (or another piece of parchment paper) to press firmly into pan.
– pour 1/4 of remaining honey-syrup mixture over granola/gooey mixture in pan.
– bake for 20min or so, at 350F.
– allow to cool on rack before cutting into granola bars.
