mango pepper guacamole

superbowl sunday is just days away… and believe it or not, tailgate/superbowl parties can still have healthy — and, of course, yummy — snacks. :)  while i’m not a football fan (actually, a diehard hockey fan — how can you tell i’m canadian?!), i thought it might be fun to create a green/gold superbowl recipe for my green bay packer fans. paired up w/ low-fat baked potato chips or thin cripsy crackers, this chunky guac is sure to be a touchdown!

combine & fold ingredients in prep bowl:
– 3 haas avocados (peeled, pitted, rough chop)
– 1 fresh mango (peeled, pitted, rough chop)
– 1 yellow bell pepper (cap only, rough chop)
– 1 garlic clove (finely chopped)
– 1/4 cup organic grape tomatoes (cut in halves)
– 1/8 cup organic fresh cilantro (rough chop)
– add freshly squeezed juice from 1/2 lemon generously over avocado chunks to preserve vibrant green colour
– season w/ pinch of salt & ground black peppercorns
– season w/ lemon zest
(tip: be careful when using a rasp to grate the lemon — the blades on a rasp are very sharp. only grate the ‘zest’ or outermost rind of lemon, and not the ‘pith’ or white fibres underneath the rind.)

food styling:
– use a medium-large bowl — easy access for hungry football fans! :)
– garnish w/ sprig of fresh cilantro
