organic spinach salad w/ eggs, cottage cheese & balsamic nutmeg vinaigrette

sometimes the simplest ingredients are all you need for a fabulous meal…

this easypeasy lunch was a spinach salad w/ grape tomatoes, baby carrots, cottage cheese & soft-boiled eggs, drizzled w/ balsamic nutmeg vinaigrette. all of the ingredients are standards in my fridge and pantry, so it was pretty simple to pull together a quick lunch/brunch.

– organic spinach leaves
– 1/3 cup grape tomatoes (cut in halves)
– 1/3 cup baby carrots (chopped into long thin sticks)
– 2 free-range eggs, softboiled
– 1/4 cup light cottage cheese

the dressing:
– 2 tbsp extra virgin olive oil
– 1 tbsp balsamic vinegar
– dash of ground nutmeg
– dash of ground black peppercorns
