blue poppyseed chicken w/ light blue cheese vinaigrette & grape tomatoes w/ organic rainbow chard

In culinary experiments, dinner, easy weeknight meals, gluten-free, lunch on 01.23.11 at 5:10 pm

who says a cleanse can’t be yummy? ;) this culinary experiment was easypeasy and perfect for a quick weeknight meal.

– brown 2-3 shallots (rough chop) with extra virgin olive oil in a pan
– drizzle 2 tbsp light blue cheese vinaigrette on each side of lean chicken breast (tip: try bolthouse farms’ chunky blue cheese yogurt vinaigrette – only 25 cal, 2.5g fat per 1 tbsp)
– add the chicken breast to the pan, flipping to ensure that each side of the chicken gets some shallot/olive oil mixture
– sprinkle blue poppyseeds on each side of the chicken breast, while cooking on low-medium heat (until chicken is browned and no longer pink inside)

food styling:
– plate chicken on a bed of mixed greens, sauteed swiss chard, brown rice, quinoa or a side of your choice… garnish with grape tomatoes (rough chop). ta-daaaaa!
